Leading the kitchen at Mosaic with an approach that blends global inspiration with a philosophy of sustainability that honors every ingredient, Executive Chef Eric Dantis’s menus are guided by the belief that food should tell a story—echoing the Museum’s mantra of celebrating cultural diversity, gathering, and connection.

Chef Dantis, a graduate of the French Culinary Institute and Seton Hall University, cultivated his craft in the New York City dining scene. His Filipino heritage and exposure to eclectic, multicultural kitchens inspired him to embrace bold flavors while remaining grounded in authenticity and balance.

Chef Dantis’s approach values not only the finished dish, but also the integrity of its sourcing—championing local purveyors and sustainable practices that ensure every plate pays homage to both nature and community.

Now, at Mosaic, Chef Dantis brings this philosophy to life. By elevating humble ingredients, celebrating regional partnerships, and cooking with an ethos of sustainability, Chef Dantis ensures that every meal is as thoughtful as it is flavorful, creating a dining experience that, like the art surrounding it, is both inspiring and enduring.
